“Chiacchiere”

To anticipate the next great range of events that will take place in Abruzzo for the Carnival, we would like to suggest the recipe of traditional "chiacchiere", provided by Marianna Colantoni, a blogger at www.lamacchiarola.it

Ingredients: 480 gr of "00" flour; 4 eggs; 40 gr of butter; 40 gr of sugar; 1 tablespoon of brandy; 1 pinch of salt; sunflower seed oil for frying

Set the flour in a pyramidal shape, make a small hole at the top where you can add the eggs, sugar, the softened butter at room temperature, brandy and salt.

Knead the mixture until you get a smooth and homogeneous ball, then leave it to rest for 5/10 minutes under a cloth.

Meanwhile, start to heat the frying oil.

After this time, take a piece of the dough and roll it out with a rolling pin or a dough-roller, making some strips; from these stips, by using a toothed wheel, you can obtain  "chiacchiere".

After that, continue to roll out the dough and create "chiacchiere" from the dough and then, a few at a time, fry them in oil. When they have cooled down, sprinkle them with some icing sugar and serve them... they are delicious!!!
